There are a few choices Karen. Mineral oil is a very popular and affordable choice. It’s non-toxic, odorless, colorless and doesn’t go rancid. It soaks into the wood to prevent moisture absorption. But, it doesn’t create a hard, durable surface, offers low water resistance, and requires frequent reapplication.

Mineral oil blended with beeswax is a common and effective combination.  You can buy pre-made versions or easily make your own (typically a 4:1 or 5:1 oil to wax ratio, gently heated until the wax melts into the oil).

While pure tung oil is a viable alternative, I’d avoid it, as it takes a long time to cure completely and multiple coats are usually needed.

Finally, if you just want to get on with it, you can purchase a commercial product specifically designed for cutting boards like Walrus Oil Cutting Board Oil (available from Lee Valley).
