You sure can, especially for small projects. Apply a thin coat of glue to both the MDF and the veneer and make sure to cover all the way to the edges. Then use cauls and clamps to ensure a flat and wrinkle-free finish. I’d leave the assembly clamped overnight. Good luck on your build.
